I haven’t tried this recipe yet, but my aunt and uncle love it!
Ingredients:
1 1/2 cups shredded fresh mozzarella cheese
2 tbsp. shredded fresh parmesan cheese
2 tbsp. gluten free cream cheese
3/4 cup of gluten free almond flour
1 egg
Instructions:
Melt both kinds of cheese and cream cheese in the microwave for 1 minute to soften. Add in almond flour and egg. Knead the mixture until it can be formed into a ball of dough. On parchment paper add a light dusting of almond flour. Pat the dough down into a pizza shape. Transfer dough to a pizza pan and keep pushing the dough to fill out the pan and make a thin crust (not too thin). Poke holes in the dough with a fork. Bake dough in a convection oven at 425 degrees for 8 minutes.
Add toppings. She used pizza sauce, low-fat gluten free mozzarella, sauteed cremini mushrooms, spinach, halved cherry tomatoes, homemade bacon bits (use gluten free bacon), and gluten free pepperoni. You can use any toppings you want.
Place back in the oven for almost 15 minutes (until cheese is melted).
A version of this recipe came from the 2009 movie “Fat Head”, she added parmesan cheese for extra flavour. It looks delicious Aunt Sheila, thank you for sharing!
