Vegetarian Chili or Beef Chili
(add in browned ground beef while sautéing if you want it to have meat).
In a large saucepan sauté 1 clove of garlic and 1 small sweet onion.
Then add in mushrooms and continue to sauté
Then add in 2 cans of diced tomatoes
Chili powder to taste
Cumin to taste
Salt and Pepper to taste
If you want some heat a bit of cayenne pepper or other chili peppers of your choice
Simmer until tomatoes are cooked
Add one can black beans
Add one can kidney beans
You can also add some diced zucchini and some frozen corn niblets for more veggies.
simmer and continue to season until cooked and the flavour is to your liking.
You can substitute ground beef with ground chicken or turkey, whichever you prefer.
