Vegetable Frittata

This is what I do with vegetables that I need to use. I make a frittata. Delicious and nutritious.
Ingredients vary depending on what veggies you have in your fridge. The following ingredients are what I used the last time I made one.

Ingredients
1/2 large sweet onion finely chopped
1 cup bell pepper finely chopped
1/3 zucchini finely chopped
1 tomato finely chopped
2 cups spinach

12 eggs
1/2 cup of milk, finely grated cheese (enough to cover the top).

Sautee onion, peppers, zucchini, and tomato until tender. Add spinach and sautee until cooked (this doesn’t take long).

Spread on the bottom of a greased 9×13 pan. Let vegetable mixture cool.

In a bowl, beat eggs, milk, salt, and pepper.

Pour egg mixture over vegetables (once cooled).

Sprinkle cheese on top. Take a fork and push the cheese down so it is underneath the egg mixture and won’t burn during baking.

Place in preheated 350 degree oven for approximately 40 minutes. You should be able to put a knife in the center of the frittata and have it come out clean.

Note: some vegetables have more water content than others. If you want your frittata to be more firm, choose vegetables with a lower water content.
