Chic Pea and Ham Chowder

Ingredients

1 large clove of fresh garlic, finely chopped
3 stalks of celery, chopped into small pieces
5 large carrots, sliced
2 large potatoes, small cubes
1 can of corn
1 can of chic peas
1 tsp of ground black pepper or to taste
1 sprig of fresh thyme
1 bay leaf
1 Litre container of Imagine Chicken broth (or other gluten free variety)
1.5 tbsp olive oil
1 cup cooked gluten free ham cut into cubes

Directions

In a large pot sweat garlic, onions, and celery in 1.5 tbsp of olive oil.


Add in chopped carrots and potatoes, 1 tsp of ground black pepper, and stir.

Add in one can of rinsed chic peas and 1 can of unrinsed corn. Place a fresh sprig of thyme and a bay leaf on top.

Cover with 1 litre of gluten free chicken broth. Simmer on 3 (temperatures vary, don’t over boil pot). After 40 minutes remove thyme and bay leaf. Continue to simmer until carrots and chic peas are soft enough to mash. Mash it all up using a potato masher. Add in 1 cup of cubed gluten free cooked ham and reduce heat. Once ham is heated through your chowder is ready. Enjoy!
